Sweet Onion Soup

Onion Soup

Ingredients:

  • 2 large sweet onions
  • ¼ cup canola oil
  • 3 cloves garlic
  • 2 bay leaves
  • 1 ham hock
  • 2 quarts extra hearty beef stock

Directions:

This is a very simple soup intended to be made in very few steps

  1. Begin by peeling onions and garlic, dice garlic and slice or julienne onion
  2. Using a medium sized stock pot heat canola oil, sauté onions for 45 minutes until golden brown
  3. Add garlic, bay leaves, ham hock and beef stock, bring to a boil
  4. Let simmer for 3-4 hours until onions are tender and ham hock is edible
  5. Enjoy this soup with a fresh baguette
