Caramelized Onion Puff Pastry Rounds

Ingredients:

  • 2 sheets puff pastry
  • 2 large onions, diced
  • 1/4 cup butter
  • 1/4 teaspoon salt
  • 1 teaspoon sugar
  • 1/4 cup finely minced fresh rosemary

Directions:

Preheat oven to 400°. Using 2 inch round cutter, cut out puff pastry rounds. Refrigerate until ready to use. Melt butter in sauté pan. Add onions, sugar, and salt. Cook on medium high heat until onions start to brown, stirring occasionally. Cool slightly. Spoon caramelized onions onto puff pastry rounds, bake 14-15 minutes or until puff pastry is golden brown. Garnish with fresh rosemary and serve warm
