Sweet & Spicy Shrimp Cocktail

Shrimp Cocktail

Ingredients:

Serves 3
  • 2 lbs cooked shrimp
  • 1 avocado
  • ½ cup cantaloupe
  • ½ cup honeydew
  • 1 Anaheim chili
  • ½ cup white onion
  • ½ cup papaya
  • ½ cup watermelon
  • 1 bunch cilantro
  • 1 cup cocktail sauce
  • 3 limes
  • pepper
  • salt

Directions:

  1. Gather a medium sized bowl, cutting board, and sharp knife
  2. Remove all seeds and skin from all fruit and vegetables and dice into similar size and shape
  3. Combine diced vegetables with lime juice, salt and pepper in bowl
  4. Mince cilantro, add to mixture
  5. Add cocktail sauce to base of a serving dish (4-6 ounces in size)
  6. Add hefty spoonful of vegetable mixture to surface of cocktail sauce
  7. With presentation in mind, place shrimp around serving dish
  8. Garnish with lime and cilantro
