Mediterranean Stuffed Sweet Onion Bulbs

Ingredients:

  • 3 medium sized sweet onions
  • 2 cups Basmati rice
  • 1/2 lb diced beef chuck
  • 1 tablespoon tomato paste
  • 1 can diced tomatoes
  • 1 oz lemon juice
  • Salt
  • Pepper
  • Saffron (optional)

Directions:

  1. In a large bowl, combine rice, beef chuck, tomatoes, and tomato paste. Add salt, pepper and saffron to taste
  2. In medium-size stockpot, bring water to boil. Add peeled onions, allow to poach for 20 minutes (or until tender)
  3. Cut off the root end of each onion and make an incision down the side. Peel back each individual onion layer
  4. Stuff each layer with rice mixture, and wrap like a burrito
  5. Fill casserole dish with stuffed onions and sprinkle with lemon juice
  6. Cover with foil and bake at 350° for 90 minutes or until rice is cooked.
