Sweet Onion & Raspberry Chipotle Relish



  1. Peel and clean onion and garlic, slice onion and garlic very thin
  2. Using a small sauce pan, heat oil to medium heat
  3. Sauté onions for 45 minutes until brown and caramelized (careful not to burn onions), add garlic
  4. Add frozen raspberries, cinnamon, cloves, vinegar and sugar. Add salt and pepper to taste. Bring to a boil
  5. Open can of chipotle peppers and add juice only. Be careful, this is spicy!
  6. Let mixture cook down until thick and rich, cool completely
  7. Serve relish over a cracker or toasted flat bread with cream cheese
